The word “fondue” comes from the French verb fondre, meaning “to melt”, and early recipes were first documented in Swiss cookbooks in the late 17th century. Purportedly the dish developed in mountainous regions of Switzerland where shepherds used the dish to stretch old cheese, a bit of wine, and stale bread through the winter. It wasn’t until the 1930s that fondue became a national dish of Switzerland, thanks to a clever marketing campaign by the Swiss Cheese Union (yes, that was a real thing!). They promoted fondue as a patriotic Swiss meal, encouraging people across the country to eat more cheese.

Over time, regional variations developed, such as the famous moitié-moitié (half Gruyère, half Vacherin Fribourgeois) in western Switzerland, and fondue even expanded beyond cheese to include chocolate fondue and fondue bourguignonne (meat fondue with hot oil). A Swiss cheese fondue usually includes some combination of the varieties Emmentaler (aka Swiss Cheese), Vacherin, and Gruyère. The Gruyère comes from the village of La Roche in the far north of the Gruyère district, then it’s matured in the cellars of a renowned nearby master cheese maker for a period of around 8 months. We also recommend the Malakoff – a dish that resembles a kind of croquette stuffed with cheese, sat on toast, and deep fried.

Yes, it’s going to feel a little touristy, our suggestion is to avoid the weekends for this reason, but this is a great night out for families with children – or children with adults who are willing to be a little silly. 🧀 Classic Fondue, plus Fondue Bourguignonne (meat and chicken with hot oil) or a version of Chinese hot pot with broth. 🍺 Swiss Beer Pairing: Because sometimes, cheese needs beer instead of wine.
